Calling this a recipe is a bit like calling Paris Hilton an actress – a monumental stretch! It’s really more of a list of things to throw together than anything that could concievably be called a Proper Recipe. Despite this, though, it is delicious, nutrirtious and easy as pie to make – and those are three qualities I’d happily have in my food any day. It’s also simultaneously a great source of energy and gloriously comforting, which makes it that astonishingly rare beast; healthy comfort food! So although it lends itself to being the sort of thing you’d usually think of for breakfast, I actually find that I wind up making it for supper more times than I care to admit – especially if I’m alone, as exhausted as I am at the moment, and in need of a little bit of gastronomic TLC…
INGREDIENTS
| 1/3 cup (80ml) dry rolled oat for making oat porridge (e.g. Jungle Oats if you’re in South Africa) |
| 320ml water |
| sea salt |
| runny honey |
| 1 handful chopped almonds |
| 1 handful goji berries |
| 1 handful fresh blueberries |
Serving Size : Serves 1
METHOD
| 1. | Place the oats, water and pinch of salt into a saucepan and bring to the boil. Once boiling, turn down the heat and simmer gently until the oats reach your preferred consistency. |
| 2. | Put the oats in a bowl, drizzle with honey. |
| 3. | Top with the almonds, goji berries and blueberries. |
