I think I’m coming down with flu, so am not really feeling up to writing a scintillating post tonight – frankly, I don’t think I’ve ever felt less scintillating in my life! So, instead, herewith a simple recipe for a country-style loaf that is about the sort of nourishing, comforting thing I feel the need for at the moment…

By the way, although the recipe below specifies the seeds to use, this recipe can easily be adapted to use any seeds, nuts, fruit (e.g. raisins, goji-berries, etc) that you fancy. Just make sure that they add up to 150ml…
INGREDIENTS
| 500 ml nutty wheat |
| 250 ml brown bread flour |
| ½ teaspoon of salt |
| 40 ml brown sugar |
| 1 heaped tsp bicarbonate of soda |
| 50 ml sesame seeds |
| 50 ml sunflower seeds |
| 50 ml pumpkin seeds |
| 500 ml buttermilk |
METHOD
| 1. | Mix together all of the dry ingredients and stir in the buttermilk. |
| 2. | Place in oiled bread pan and bake at 200 °C for 15 min, then turn the heat down to 180°C and cook for a further 45 min. |
| 3. | Take out of oven and leave to cool for 5 – 10 minutes. Turn out onto a cooling rack and stand until completely cooled. |
